| Skills by Numbers 25. | HOW TO MAKE A WHITE SAUCE (BECHAMEL). | |
| Method: | ||
| 1. | Take 25g of butter and melt in a pan. When molten add 25g of plain flour and mix to a paste. |

| 2. | Cook the two together for a couple of minutes over a low to medium heat. You do not want to colour the mix. |
|
||
| 3. | Pour in ¾ pint of milk and whisk in vigorously. |
|
||
| 4. | Stir over the heat until it comes to the boil. Cook for 1 more minute and remove from the heat. | |||
| 5. | Mix in a good pinch of salt and pepper. It is now ready. You can use this as a base for sauces. Add cheese and it is a cheese sauce, add mustard and it is a mustard sauce etc. | |||
