  Skills by Numbers 25. HOW TO MAKE A WHITE SAUCE (BECHAMEL). 
  Method:
    1. Take 25g of butter and melt in a pan. When molten add 25g of plain flour and mix to a paste.

    2. Cook the two together for a couple of minutes over a low to medium heat. You do not want to colour the mix.

    3. Pour in ¾ pint of milk and whisk in vigorously.

    4. Stir over the heat until it comes to the boil. Cook for 1 more minute and remove from the heat.  

    5. Mix in a good pinch of salt and pepper. It is now ready. You can use this as a base for sauces. Add cheese and it is a cheese sauce, add mustard and it is a mustard sauce etc.
