I consider this an excellent skill as it is an all-round fast food that can save the day on many occasions. |

Take a couple of eggs and a dash of milk. Mix well in a mug. Add a pinch of salt and pepper, and some herbs of your choice. |

Choose what you want to fill the omelette with. Chop it up and add it to the mix. Don't add too much or you will ruin the omelette. |

Get a frying pan, preferably non-stick, and heat it up. Add a little oil and wait until it is very hot but not smoking. Give the mix a final turn and pour in. It should hiss as it hits the hot metal |

Pull the mix from the edges to the centre and fill in any gaps that have been made with the still liquid mix. Do this a couple of times and allow the omelette to cook. |

Once the bottom starts to free itself, it is nearly ready. Fold the omelette in two and serve on a hot plate. |

It should be moist inside but not raw, this is why you don't want to have too much mix in each one. The outside should be lightly browned not burn. Enjoy. |
