| Skills by Numbers 17. | HOW TO PEEL CITRUS FRUITS. | |
| Method: | ||
| 1. | This is a very handy technique that applies to all citrus fruits. | |||
| 2. | Cut the ends off the fruit. You should cut enough off so that the end shows the fruit not the pith. |

| 3. | Place the fruit on one of the cut ends. Take a sharp knife and cut from the top cut end to the bottom one. Cut a slice a couple of centimetres wide, which is deep enough to expose the flesh, but not so deep that it takes half the fruit off. |

||
| 4. | There will be bits of pith on the edges of the cut. Continue around the fruit until it is peeled. |
|
||
| 5. | Trim off any bits you have missed and you have done it. |
