Before chopping, wash your herbs to make sure that they are clean. Some herbs are grown in sandy soil and that, oh so gritty, texture is not what you are looking for. |

Bunch the herbs tightly in your hand and press down on the chopping board. Push them up to the knife blade and cut as if you were trying to slice them finely. |

Take the end of the knife in one hand and the handle in the other, making sure that you won't cut yourself. Holding the tip down, move the handle up and down to give a fast chopping action. |

Move this chopping action over the herbs, cutting in different directions until the herbs are chopped to the required size. |
