  Skills by Numbers 15. HOW TO MAKE TOMATO CONCASSEES.

  Method:
    1. Put a pot of water on to the boil. Place a fork in the top of the tomato and place it in the water for a few seconds.

    2. Once removed, place it in iced water or under a cold tap to cool. You should now be able to peel the tomato with ease.

    3. Once the tomato is peeled, chop it in quarters through the stalk.

    4. Remove the seeds and pith, you should now be left with skinless pieces of tomato flesh.

    5. Roughly chop the skin into squares, you are now ready to use it
