Start by making your mix. I use 125g flour, 1 large egg, mixed together with 300ml of milk. I beat this together and let it rest in the fridge for an hour. |

If I am making sweet pancakes, I will add a dessertspoon of sugar. If I am making savoury pancakes, I will add a teaspoon of herbs de provence and a pinch of salt and pepper. |

Heat a non-stick pan with a small knob of butter in. |

Pour a small amount of mixture in, tilting the pan in several directions so that it covers the bottom of the pan. |

5. |
Cook until the bottom of the pancake loosens from the pan |
|
|
| |
|
6. |
Flip the pancake, allow the bottom to brown and serve. |
|
|
| |
|
7. |
Remember to have a hot buttered pan and don’t put in too much mix or you will be left with a stodgy mess. |
