To start with, you are best off if your ingredients are cold. So whilst you are looking for kit, put them in the fridge. If you have an electric machine, ignore the following and get whipping |

Find a nice big bowl and a whisk. If you can’t find a whisk, you can use a handful of forks. This does work, but not as well. |

Make sure that your bowl is clean and dry, as this makes quite a difference. |

Put your ingredients in the bowl with a small pinch of salt. Whip using a clockwise flicking of the wrist. Almost like an exaggerated use of a bullwhip. |

You can whip cream softly, so it has a little air in it or fully, where if you make a swirl the cream holds the shape. Egg whites should be whipped until they hold their shape. |

It can take time, especially if you are using forks, so keep going. You can over whip, so be careful of it going grainy. |
