  Skills by Numbers 1. TO JOINT A CHICKEN. 
  Method:
    1. Follow the line of the drumstick and pull out from the main body of the chicken. With a sharp knife cut the skin in the gap. When you get to the bone stop.  

    2. Push the drumstick away from the body of the chicken hard. You should hear a click as the joint breaks.  

    3. With the knife cut through until the drumstick and thigh are separate from the chicken.

    4. To separate the drumstick from the thigh, cut the flesh on the point where the joint bends. Break the joint by bending it backwards until it breaks, then cut though. Repeat on the other side.

    5. The wings can be cut off, and the joints broken where needed.  

    6. To remove the breast, cut from the ridge on the top of the bird. Go to one side and follow the bones down, cutting as close as possible to the bone so you get as much meat as possible.

    7. Be careful to not cut through into the cavity. Once you have sliced off the breast, check that there are no scraps of bone on it. You are now ready to cook with your chicken pieces, well done!
